Very Interesting Doktor,
My teacher speaks also of seven sacred lineages of Toltec Wisdom. The nagual is one who is initiated into the tradition of the sacred sacrificial fire, the Sozmee. However, the Coyote is definitely one of the main leineages in the Toltec perspective. We are a healing tradition dealing with the plant medicine. The plants are the first ring of power, and the second ring begins once all the ancient wisdom of the plants has been ingested. This is a very safe way to proceed into the further attentions. I would know nothing of the second attention if it weren't for the plant powers that pushed me into that realm of consciousness. However, I do tend to focus on the second attention without an incredible amount of ground in the first. I will have to work my ass off to attain Grandfather's knowledge and to work off karmic baggage, but I am intent on this task.
You may be surprised to know that all these teaching about dreaming and stalking were not passed on by the old incarnation of Don Juan, but by the Tenant him(her)self. The Toltecs don't find teaching in such categorical manners practical. The same kinds of things are learned naturally as one walks the Infinite Path, however.
The Coyote is similar to your description of the Elephant.
