I obviously beleive that whatever stalking activity is chosen should be one that puts you in a very uncomfortable or even scarey situation to challenge your notions of reality.
Of course the joy of it comes when you do break through some barrier.
I also beleive that there are many disciplines, sports, hobbies, activities, and such that fit very well into the art of stalking. One of the goals of stalking is to learn how to work dynamicly in the daily world, become adaptable and fluid to make the best of any situation. THUS
Hunting
Hunting comes in so many different forms. You stalk the behavior of animals and kill them for sustenaince. It is a reminder that you too will be sustenaince for something or someone some day. You realize how set patterns and routines are not always the best thing. I don't hunt much but I do fish - certainly a form of hunting.
Acting / Theatre
You become someone else, almost certainly better in an actual theatre as opposed to a movie. That being said there are some actors who have really taken this to the extreme, like Heath Ledger as the Joker. He got so lost into the role that it drove him to suicide.
Martial Arts
Best done with others but fine alone too. Sometimes there are a lot of arrogant martial artists though. But if you are the type that approaches this by saying "You'll have to show me your kenpo some time," or ,"Maybe you can help me improve my Wing Chun chi sao." People help you to see where you are slow, doddling, or perhaps even too agressive and impatient.
Rock Climbing
I've never done it, but you are in a state of physical imrpovisation the entire time to find the next ledge, crack, or find a way up...
Extreme Sailing
I'm not talking about yachting. I am talking about competitive sailing, preferably high wind or very long distance. For me this is windsurfing. Other forms of this might be catamaran sailing or long, long distance sailing (100's of miles). You have no choice but to work with natural forces that are unpredictable in order to progress. Quite often there is nothing else to think about other than what you are doing.
Other 'Extreme Sports'
Surfing, snowboarding, skydiving, all of these put you at the mercy of some unknown element where you must act or fail.
Musical Performance
Best to be practised for entertaining a crowd. This is especially great for shy or timid people. One could go on and on about rythm and melody etc, and the sublime mental states reached to make good music.

Working a JOB for Actual Joy
I beleive that one of the things that plagues our society is being stuck with jobs or occupations that we do not enjoy. Essentially this is slavery. As stalkers either we find the joy in what we do, or find something else to do...preferably something that challenges us to grow. YES this includes working with petty tyrants.
And Finally
Dealing with Petty Tyrants
You HAVE to approach this from a position of joy or it is useless. You seek out people in positions of power who are capable of putting you in an icky situation, and you overcome yourself to effectively deal with them.
So, I am into martial arts (obviously), extreme sailing, fishing, and working a job I enjoy
What are you guys and gals into? Wanna play? lol
